Scrambled Eggs
Serves 1
Ingredients
3 free-range or organic eggs
1 teaspoon chia seeds
Pinch sea salt
100 grams baby spinach leaves
1 teaspoon fresh grated turmeric
2 tablespoons coconut milk or cream
2 teaspoons olive oil
1 tablespoon Super Greens Pesto (recipe below)
Directions
Add the coconut milk, chia, turmeric, eggs and sea salt to a bowl and whisk until well incorporated and set aside.
Add a teaspoon of olive oil to a pan and heat over low-medium heat. Add in the spinach and sauté for about 30 seconds until it wilts. Remove the spinach from the heat.
Add one teaspoon to a 20 cm pan, heat over medium heat and then add the egg mixture. Stir gently through until the eggs begin setting and becoming creamy.
Add the spinach, fold through and serve hot with super greens pesto below.
Super greens pesto
Serves 2-3 (as a side dish)
Ingredients
1 large bunch parsley
1 clove garlic, smashed
½ teaspoon freshly ground black pepper
4 tablespoons cold pressed olive oil
1 large bunch basil
1 - 2 tablespoons lemon or lime juice
¼ teaspoon sea salt or to taste
Directions
Add the garlic, basil and parsley to a high performance blender or food processor. Process well until the herbs become finely chopped.
Add in the lemon juice, olive oil, salt and pepper and mix once more until you get a nice, fragrant paste.
Put the paste in a glass jar and store in the fridge for up to seven days.
